Data collected by your sensory organs helps your brain understand how diverse and dynamic your surroundings are. This is key to making decisions in the moment and memories, as well. Now it’s time to go deeper on each sense and learn how you gather information about the sounds, textures, sights, tastes, and smells you encounter. Interoception detects responses that guide regulation, including hunger, heart rate, respiration and elimination.
A small study published in the New England Journal of Medicine in 2016 found that a gene called PIEZO2 may play an important role in proprioception. Researchers deciphered this after discovering that mutations in the gene caused two patients to have issues with balance and movement, as well as the loss of certain types of touch. Dogs are great smellers, but research hints that humans may be just as good. The vestibular system sends signals primarily to the neural parts of the brain that control our eye movements, and that keep us upright.
Smell + Taste = Flavor
Tiny hair cells in the organ of Corti translate the vibrations into electrical impulses which travel to the brain via sensory nerves. The sense of hearing works via the complex labyrinth that is the human ear. Sound is funneled from the outside, along a passageway in the outer ear called the external auditory canal or ear canal. Then, sound waves reach the tympanic membrane, or eardrum. This is a thin sheet of connective tissue that vibrates when sound waves strike it.

So, during meals or snacks, your brain constantly receives information about the foods you eat. Tastes from different parts of a meal are combined as you chew and swallow. Each taste sensed by your tongue helps your brain perceive the flavor of your food.
It allows us to discriminate between safe and harmful foods. Usually, individuals prefer sweet and salty tastes to sour or bitter tastes. Detecting salt is critical to keeping a regulated and stable internal body environment. This taste is perceived positivity because it facilitates re-uptake of water into the blood. Since it helps survival, salt is perceived as a pleasant taste by most humans. The olfactory bulb is located in the most forward part of the brain on the bottom side of the brain (see figure).
It is a myth that the tongue has specific zones for each taste. The five tastes can be sensed on all parts of the tongue, although the sides are generally more sensitive than the middle. About half of the sensory cells in taste buds react to several of the five basic tastes, however the cells differ in their level of sensitivity toward them.
